This roasted chicken recipe is the way my grandmother used to make it. This method results in the juiciest chicken! We loved to nibble on the celery after it was cooked.
3 tablespoons pepper
3 tablespoons dry parsley
3 tablespoons Robertson zesty lemon and herb spice
30 ml peri peri sauce
2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons group coriander
Mix all the ingredients together and use the mixture to coat the chicken and leave it to marinade for 4 hours .
Place the under a preheated oven 200 degrees Celsius for 45 minutes.
