Red Velvet Layer Cake

Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon fine salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 tablespoons red food coloring (adjust to desired color)
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

1 pound cream cheese, softened
1/2 pound unsalted butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners’ sugar

Cake:
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.
Make the cake batter: In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In another large bowl, gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer.
Combine the dry ingredients with the wet: Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Bake the cake: Divide the cake batter evenly between the prepared pans. Bake in preheated oven for about 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Remove from oven and cool cakes on a wire rack for 10 minutes, then turn out onto the rack to cool completely.
Cream Cheese Frosting:
Prepare the frosting: In a large mixing bowl, beat the cream cheese, butter, and vanilla together until smooth. Add the sugar and beat until frosting is light and fluffy.
Frost the cake: Once the cakes are completely cool, apply a layer of frosting on one cake layer, place the other cake layer on top, and then frost the top and sides of the cake.
Decorate: Garnish with red velvet cake crumbs for a beautiful finish.
Serving and Storage:
Serve the cake chilled or at room temperature.
Store any leftover cake in the refrigerator, covered, for up to 5 days.
